MANUFACTURING PROCESS

The process begins with the harvesting of the olives from the olive tree, which is carried out mechanically and with curtains on the ground so that the olives do not come into direct contact with the ground.

The fruit is then transported in trailers to the Cooperative, where it is unloaded into stainless steel hoppers.

The olives are then mechanically cleaned and washed and, once cleaned and washed, they are transferred to the crushing hoppers, also made of stainless steel, where they are left to rest for four to twelve hours before being crushed.

Once the milling process has begun, the milled dough is passed to the mixer where it will be beaten for three hours at a temperature of 27º (cold extraction).

The next step is to separate the oil from the mass, for which the decanter is used. Once the oil has been separated, it is diverted to the centrifuge to remove any dissolved water.

The oil is then tasted by the mill master and placed in the cellar, which is made up of stainless steel tanks, where the oil remains until it is bottled and sold.

This whole process is carefully supervised by the mill master, who will be in charge of giving the go-ahead at all times.

During the entire milling process, no additives are used, except for water, which has been previously analysed and is fit for consumption.
